Oat pancakes

Get ready for doughy and delicious pancakes! Spread nut butter and sliced fruit on top for a change from regular bread.

Ingredients

  • 1 bottle (237 mL) Vanilla Glucerna®
  • ½ cup (125 mL) quick oats
  • 1 cup (250 mL) all-purpose flour
  • 1 egg
  • ½ tsp (2.5 mL) baking powder
  • 1 tbsp (15 mL) non-hydrogenated margarine

Instructions

  1. In a large bowl, mix the Glucerna®, oats, flour, egg, and baking powder until a batter forms.
  2. In a large frying pan, melt the margarine over medium heat.
  3. Pour 60 mL (¼ cup) of the batter into the pan.
  4. Cook until the pancake is dry around the edges, flip, and cook until the pancake is golden brown on both sides.
  5. Repeat steps 2 to 4 as required.
  6. Top the pancakes with pieces of fresh fruit and yogurt.
